I got this recipe from my sweet friend, Michelle, when we were in college. I've made it several times for friends down here and the demand has been high for the recipe so here it is:

Easy Lasagna Casserole


Ingredients:
2 cups cooked egg noodles
1 lb. ground beef
¼ cup chopped onion (or onion powder)
1 (8 oz.) can tomato sauce
1 (8 oz) can crushed tomatoes or add marinara sauce
½ tsp. salt
1 (3 oz.) cream cheese
1 mall (5.3 oz) can evaporated milk
¼ tsp. garlic salt
½ cup grated Mozz. Cheese

Instructions:
Cook noodles in salted water. Cook beef and onion in skillet. Drain beef. Stir in tomato sauce and salt; simmer 5-10 minutes. Drain noodles. Put noodles back into sauce pan and add cream cheese, evaporated milk, and garlic salt. Stir until cheese melts and sauce thickens. Pour noodles into an 8 inch square pan. Spread meat mixture over top. Bake 15 minutes at 325°. Remove and sprinkle grated cheese. Put back into over for 5 minutes or until cheese melts. Serves 2-4 people.

I like to make a slightly healthier version of this so I use whole wheat egg noodles, organic tomato products, and organic meat. You could substitute the hamburger meat for ground turkey, pork, or chicken if you don't do red meat.

Casey's Soup

Ingredients:
1 can of sliced new potatoes
1 can of lima beans
1 can of sweet peas
2 cans of green beans
1 can of creamed corn
1 can of yellow corn
1 can of tomatoes & okra (comes in same can)
1 can of BBQ pork (Castleberry's)
1 can of BBQ beef (Castleberry's)

Directions:
Empty all ingredients into crock pot
Cook on low for 4 hours


*You may add or substitute any veggies you have or like. The main thing is to have the BBQ meat to give it the flavor. I try to use organic ingredients when possible although you can't find the meat organic. Also, I crumble up saltine crackers in mine. This makes a lot so unless you are feeding a big crowd, I'd freeze 1/2 of it.
